Rib eye is the steak that forgives you. It has more marbling than any other cut, those thin white lines of fat running through the meat, and they melt as it cooks and baste the steak from the inside. That is why learning how to cook rib eye steak is the easiest way to get a steakhouse result at home. You do not need a fancy grill or a long marinade. You need salt, high heat, a timer and five minutes of patience at the end.
This guide gives you the exact method and cooking time for every way Egyptians cook steak at home: the pan, the charcoal, the oven and the air fryer. The times are for a steak about 2.5 to 3 cm thick, the way we cut our Balady rib eye steak.
Before you cook: three steps that matter more than the recipe
- Take it out 30 minutes early. A steak straight from the fridge cooks unevenly: grey outside, cold inside. Leave it on a plate on the counter for 30 minutes, covered.
- Dry it and salt it well. Pat both sides with a paper towel. A dry surface browns, a wet one steams. Salt generously on both sides and the edges, about half a teaspoon of coarse salt per steak.
- Keep the spices for later. Black pepper and garlic powder burn on a very hot surface and taste bitter. Add pepper after searing or in the butter at the end.
How to cook rib eye steak in a pan
The pan is the most popular way to cook rib eye steak in Egyptian kitchens, and it gives the best crust. Use the heaviest pan you have: cast iron is ideal, a thick stainless steel or granite pan works too. Thin non stick pans lose heat the second the steak touches them.
- Heat the dry pan on high for 3 to 4 minutes until it just starts to smoke.
- Add one tablespoon of oil with a high smoke point, such as sunflower or corn oil. Not butter yet, butter burns at this heat.
- Lay the steak away from you and do not move it. Sear 3 minutes for medium rare.
- Flip once and sear the other side 3 minutes. Hold the steak on its edge with tongs for 30 seconds to render the fat on the side.
- Lower the heat to medium, add 2 tablespoons of butter, 3 crushed garlic cloves and a sprig of rosemary or thyme. Tilt the pan and spoon the foaming butter over the steak for 45 to 60 seconds.
- Move it to a board and rest 5 minutes. Slice against the grain and pour the pan butter on top.

Grilled rib eye steak on charcoal
Charcoal is where rib eye shines, because the fat drips onto the coals and the smoke goes back into the meat. Light the charcoal and wait until it is covered in white ash and glowing red underneath, about 20 to 30 minutes. Flames mean it is not ready yet.
- Build two zones: a thick layer of coals on one side for searing, a thin layer on the other side for finishing.
- Brush the grill with a little oil. Put the salted steak over the hot side.
- Grill 3 to 4 minutes per side for medium rare, turning once. For crossed grill marks, rotate the steak a quarter turn halfway through each side.
- If the fat causes flare ups, move the steak to the cooler side for a few seconds.
- For medium or more, finish on the cool side with the lid closed for 2 to 3 more minutes.
- Rest 5 minutes, then slice.

How to cook rib eye steak in the oven
The oven is the best choice for a thick steak or for cooking several steaks at once for guests. There are two good methods.
Method 1: sear, then oven
Heat the oven to 200°C. Sear the steak in an oven safe pan for 2 minutes per side, then put the whole pan in the oven for 4 to 6 minutes for medium rare. Rest 5 minutes.
Method 2: reverse sear for thick steaks
Put the salted steak on a rack over a tray in a 120°C oven. Cook until the center reaches 50°C for medium rare, about 20 to 35 minutes depending on thickness. Then sear it in a smoking hot pan for 1 minute per side with butter. Reverse sear gives you an even pink color from edge to edge, which is why restaurants use it for the tomahawk steak.
Rib eye steak in the air fryer
The air fryer will not give you the same crust as a pan, but it is clean and easy. Preheat it to 200°C for 5 minutes. Rub the steak with a teaspoon of oil and salt. Cook about 8 to 12 minutes in total for medium rare, flipping halfway. Every air fryer is different, so check with a thermometer the first time. For extra color, finish it 30 seconds per side in a hot pan with butter.
Rib eye steak cooking time chart
Times are per side for a 2.5 to 3 cm rib eye on a very hot pan or strong charcoal. Take the steak off the heat about 3°C before the target, because it keeps cooking while it rests.
| Doneness | Time per side | Center temperature | What it looks like |
|---|---|---|---|
| Rare | 2 minutes | 50°C | Red and cool in the center |
| Medium rare | 3 to 4 minutes | 55°C | Warm pink red center, the best for rib eye |
| Medium | 4 to 5 minutes | 60°C | Pink center |
| Medium well | 5 to 6 minutes | 65°C | Light pink line |
| Well done | 6 to 7 minutes, then lower heat | 70°C and above | No pink |
No thermometer? Press the center with your finger. Medium rare feels like the soft base of your thumb when you touch your thumb to your middle finger. For a full guide to every level, read our article on steak doneness and sauces in the list at the end.

Mistakes that ruin a rib eye steak
- A pan that is not hot enough. The steak turns grey and releases water. Wait for the first wisp of smoke.
- Crowding the pan. Two steaks at most in a normal pan. More drops the temperature.
- Flipping every 20 seconds. Leave it alone so the crust can form. One flip is enough, two at most.
- Cutting it straight away. The juices run onto the board instead of staying in the meat. Five minutes of rest changes everything.
- Cooking it well done on high heat. If your family prefers well done, sear it first, then finish on low heat or in the oven so it stays juicy. Rib eye is the best cut for well done lovers because its marbling keeps it moist.
What to serve with rib eye steak
Classic sides are mashed potatoes, fries, grilled vegetables and a mushroom or black pepper sauce. At home in Egypt we also love it with warm baladi bread, tahini and a big green salad. If you are cooking for a crowd, mix steaks: rib eye for those who love juicy and rich, sirloin for a firmer bite and beef fillet for the softest one.
Why the cut matters as much as the method
Every method above works only if the steak is cut properly: even thickness, real marbling and no water in the pack. Our rib eye comes from Balady Kandouz calves naturally raised on our farm for about 400 days with zero hormones, and it is cut thick, trimmed and vacuum packed without bare hand contact. The kilo you pay for is steak, not bone and fat you throw away.
